I usually cook at LEAST one full meal a week for myself. I love cooking with whole fruits and vegetables and I also love to document them on my Snapchat. Since I was receive so many questions about what recipes and methods I use when I post my process on social media, I decided to document them here. Braised Chicken Thighs with Squash and mustard greens
This was such a long process but a yummy one. By the time I finished this entire meal it was 2 a.m. on a Friday night! I know what you're thinking...(you're right I have no life lol)...But it was worth it!i was not able to taste this master piece until the next afternoon making the braising juice even better the day after.

SHEETPAN ITALIAN CHICKEN AND VEGGIE DINNER
I had a food photoshoot one weekend and ended up with a fridge full of veggies. I didn't want them to go to waste so, I looked up a recipe and threw everything on a sheet pan. This was a really quick and easy Sunday night dinner. Plus you'll b sure to have leftovers the next day.
Substitutes: Zataar Israeli seasoning for garlic and fresh basil. Eggplant and zucchini noodles for carrots.

sweet & Soy glazed Wild Caught SALMON
I had just finished working an 11 hour day at the restaurant and it was 11 pm. I needed to eat and refuel myself,but the meal also needed to be light & healthy. My last resort was Wild Caught salmon. Which I don't mind because my restaurant sells fresh wild caught fillet. So it was all good.
Substitues: Coconut palm sugar for brown sugar. Bourbon infused honey from Colony Urban Farm instead of maple syrup.
Sides: Riced broccoli sautéed in soy sauce

rosemary SWEEt potato crsips
When you're not supposed to be eating sugar so you make a sweet snack. This just might be my go to snack. It's quick, it's easy, and pretty self explanatory.
Substitues: Coconut palm sugar for brown sugar. Irritated cinnamon sticks & fresh rosemary. No garlic was used. Only pink Himalayan sea salt & fresh crushed peppercorn was used. Alway coconut oil.
